restaurant is fully seated on a Saturday night and the kitchen is holding 50 open tickets, Julian operates
with exceptional calm and clarity. He anticipates service failures before they happen—running food,
bussing tables, or stepping behind the bar to relieve pressure wherever it spikes. Julian also possesses
high emotional intelligence in guest recovery. If a dish is delayed or a steak is undercooked, he
approaches the table immediately, neutralizing frustration with sincere empathy and swift compensatory
action, routinely transforming dissatisfied diners into loyal repeat guests.

To prepare for a progression into a Multi-Unit Manager or Director of Operations role, Julian should focus
on the following developmental areas:
Menu Engineering & Strategic Pricing:
While Julian excels at managing current COGS, he needs to take a
more active, strategic role during the seasonal menu changes. He should work directly with the culinary
team to perform quadrant analyses on menu items (Stars, Plowhorses, Puzzles, Dogs) to strategically price
and position dishes for maximum margin yield.
Local Store Marketing (LSM):
The Brasserie relies heavily on its established reputation. Julian should
aggressively expand his Local Store Marketing efforts. By building stronger relationships with nearby
luxury hotel concierges, theater directors, and local business associations, he can drive predictable foot
traffic during historically slow Tuesday and Wednesday shifts.

6. FUTURE ROADMAP & RESTAURANT GOALS (FY2027)
Goal 1 (Service Expansion):
Serve as the primary operational lead for the launch of the new Weekend
Brunch service in Q2, managing the distinct BOH prep requirements and FOH staffing models.
Goal 2 (Beverage Knowledge):
Enroll in and successfully complete the WSET Level 2 (Wine & Spirit
Education Trust) certification to formalize his beverage expertise and elevate the sommelier training
program.
Goal 3 (Technology Rollout):
Fully implement the Toast Kitchen Display System (KDS) by the end of
Q3, phasing out paper tickets to further increase BOH firing efficiency and track precise prep times.
Goal 4 (Community Outreach):
Host a quarterly charity dining event in the PDR, partnering with local
philanthropies to embed The Brasserie more deeply into the neighborhood community framework.
