You may notarize your letter of guardianship if it is necessary. Letting them sign the letter is also enough.

Can I have two or more people assigned as legal guardians for my children and do I need to let them sign as well?

Yes. You may have two or more people assigned but make sure they are willing to sign and understand the responsibilities you gave them.

What should I do if the legal guardian in question is going to travel and wishes to take my child with them?

Tell them that they need to stay where you are as stated in the letter they signed. Since taking your child away without your consent or stated in the letter is illegal and would lead to problems. Explain to the guardian of their duties in the letter which they signed.
